Certified Food Protection Manager

Alaska regulations require food establishments, except those within the Municipality of Anchorage, to have at least one Certified Food Protection Manager (CFPM) on staff (18 AAC 31.325).

A CFPM is a person who has passed one of the following three national exams:

A food establishment's CFPM should be present during most operating hours, and when they are not present, someone who is knowledgeable about food safety practices must be assigned to take their place as the Person In Charge (PIC).


CFPM Facts and Information

  • Costs: Fees for training, testing and proctoring vary according to the parties involved.

  • Here are some appoximate prices: Training: $75 - $225; Tests: $30 - $50; Proctoring (Test Monitors) $30 - $75. Package deals run from $129 - $299

  • CFPM certifications are valid for five years.

  • Training Programs (in-person and online) average 4 - 12 hours in length. Testing usally lasts no longer than two hours.

  • Training is available from in-person instructors, online and by book.

  • A certified proctor must be present for any test, online or paper and pencil. Proctors check identities, set up online tests, hand out and collect written tests, monitor tests being taken and enforce testing guidelines.
