Preparing for the Inspection: Direct Market Seafood Processors
To make your ADEC inspection as efficient as possible, we recommend having the following items ready for the Environmental Health Officer to review.
Paperwork
- Hazard Analysis
- HACCP Plans (reviewed and signed annually)
- HACCP Monitoring Records (label log, temperature)
- Standard Sanitation Operating Procedure (SSOP) or Sanitation Plan
- Daily Sanitation Monitoring Checklists
- Product Label
- Domestic Wastewater Discharge Log (date, time, lat/long), or as applicable
- Recall Plan
- Training Documentation
Vessel or Facility Requirements
- Food grade hoses for all water that comes in contact with seafood product
- Sanitizers that are acceptable for food contact surfaces
- Smooth, and easily cleanable food contact surfaces
- Test strips for sanitizers that are used
- Test strips for testing Free (Residual) Chlorine in processing water
- Hand wash sink with hot and cold running water, soap, and paper towels
- Covered processing area (Direct Market vessels only)
- Toileting facilities
- Type II or Type III marine sanitation device or porta potty with cover (Direct Market vessels only)
- Water lines labeled or color coded for easy identification
- All chemicals and sanitizer bottles labeled and stored away from processing area
